📷Chanukah is one of my most favorite holidays. It is one of the most relaxing and stress-less holidays for me, minus of course, all the running around from party to party. I have so many memories as a kid of large outdoor Menorah lightings in the freezing cold as we warmed ourselves by eating piping hot latkes. And now, of course, my kid's have the exact same memories of our outdoor Menorah lighting event, standing huddled together in the freezing cold, singing together and warming up over the sternos that are heating up the latkes.
On the first night of Chanukah, traditionally, dinner is always latkes! We usually stay at home, play dreidel and eat lots and lots of latkes! I always love making the traditional potato latkes and then adding my own twists by using different vegetables to create new recipes. In the past, I’ve made a different kind of latke each night. From cauliflower latkes to sweet potato and apple latkes and many others in between.
Like you, I LOVE me a good bar for dinner. SO… This year I decided on a latke bar. For me, it’s much simpler to prepare the different ingredients and let everyone create their own dinner plate, instead of trying to be a short-order cook and anticipating what foods everyone will be in the mood of eating, on that particular night. I am sure your moms "know how it goes". ;) So, I will prepare a bunch of different latke recipes and everyone can choose their own different toppings to put on the latkes. I think it will be fun to see the different combo creations that my kids come up with. 📷
AND new for this year as well, is that I'm using my air fryer!! Did I tell you how much I am loving my air fryer lately? I bought one a few weeks ago and have been making everything in it! Sweet potato fries, feta bites, crispy tofu, so of course, I had to test the latkes in them, too! I actually did a test side by side with latkes made in oil in a frying pan and made in the air fryer to see which would taste better. HANDS DOWN, the ones in the air fryer were way better! They were crispy and delicious and didn’t fall apart as much as the ones that I made in the frying pan did, plus they were done much quicker! They were crispy without that greasy feeling or that lingering frying smell that you end up smelling in your house for days afterward. Extra bonus, for me as a health coach, is that this is a great way to lighten up the calorie and fat content of latkes. Have your latke and enjoy eating it too, without any of that guilt or regret!

Beet Latkes Ingredients 2 Large eggs lightly beaten4 Carrots, grated2 Beets, grated1 Sweet Potato, gratedSalt & Pepper, to tasteOil for frying, spray avocado oil for baking or air fry optional Instructions Mix all ingredients together. If frying, add oil to a hot frying pan. Shape into pancakes. If frying, wait until it is well done before flipping, so you only have to flip once.If baking, place on a parchment-lined baking sheet and spray with avocado oil. If air frying, spray the bottom of air fryer and place latkes inside. Cook until it reaches the level of crispiness that you like.

1 1/2 cups quinoa, cooked
2 tspn nutritional yeast
salt to taste Instructions 1. Mix all ingredients together. 2. If frying, add oil to a hot frying pan. 3. Shape into pancakes. 4. If frying, wait until it is well done before flipping, so you only have to flip once. 5. If baking, place on a parchment lined baking sheet and spray with avocado oil. 6. If air frying, spray the bottom of air fryer and place latkes inside. 7. Cook until it reaches the level of crispiness that you like. 8. Top with a sprinkle of hemp seeds + nutritional yeast.

Carrot Miso Latkes Ingredients 1 carrot
2 potatoes
1 tspn miso
1/2 cup almond flour
1 tspn baking powder
salt & pepper, to taste Instructions 1. Mix all ingredients together. 2. If frying, add oil to a hot frying pan. 3. Shape into pancakes. 4. If frying, wait until it is well done before flipping, so you only have to flip once. 5. If baking, place on a parchment lined baking sheet and spray with avocado oil. 6. If air frying, spray the bottom of air fryer and place latkes inside. 7. Cook until it reaches the level of crispiness that you like.

Kohlrabi latkes w/ avocado cream sauce Ingredients 2 kohlrabi
1 onion
2 carrots
3 eggs
salt Instructions 1. Mix all ingredients together. 2. If frying, add oil to a hot frying pan.
3. Shape into pancakes. 4. If frying, wait until it is well done before flipping, so you only have to flip once.
5. If baking, place on a parchment-lined baking sheet and spray with avocado oil.
6. If air frying, spray the bottom of air fryer and place latkes inside.
7. Cook until it reaches the level of crispiness that you like.
Avocado Cream Sauce Blend together:
1 Avocado, 1 clove garlic, 2 Tbspn coconut cream, 1 tspn lemon juice, 2 Tbspn avocado oil, salt and pepper to taste. Mix well.

Zucchini Carrot Latkes with creamy dill sauce Ingredients 2 zucchini
2 carrots
1/2 onion
2 eggs
Dill Sauce
1 garlic clove
salt to taste 1/2 cup Primal Kitchen avocado mayo
2 tspn fresh dill1 tspn lemon juice
salt to taste
Instructions
1. Mix all ingredients together.
2. If frying, add oil to a hot frying pan.
3. Shape into pancakes.
4. If frying, wait until it is well done before flipping, so you only have to flip once.
5. If baking, place on a parchment-lined baking sheet and spray with avocado oil.
6. If air frying, spray the bottom of air fryer and place latkes inside.
7. Cook until it reaches the level of crispiness that you like.
